Happy Hump Day!

Today will be short and sweet, as I am a bit fuzzy in the brain. I did not get enough sleep yesterday, and now I am most certainly paying for it. I have heard the many theories behind weight loss and adequate sleep...or in my case, lack thereof. Sometimes it is a bit tough to work the overnight shift, and I think that you never really get used to it. It is also a time when I start to crave crazy things. Today I think I am doing pretty well with that, so I should congratulate myself I guess. (shrug)  Anyways....

I had better get to bed before I pass out! Have a great day, you normal daytime workers!

Yesterday's Eats!

a banana, clementine, grapes and some triscuits for snacks
almond milk and oats for the morning
then I used this new yummy deliciousness....
to make this yummy deliciousness...a whole wheat English Muffin with hummus, red pepper, cucumber and spinach
I then added that to leftovers from yesterday
...and packed it all away, ready for my shift!
after that, I ate the last of my leftovers from yesterday for dinner
My Question to You: I am currently trying to eat the very last crumb of everything in my house before moving onto the next box, container or recipe in an effort to save money and feel less wasteful in general. What are your habits with leftovers?

  1. hummus! I just discovered Chickpea love (in my salad), so hummus is definitely on the list for grocery shopping. Hey! gimme dat bag!

  2. I am all for not wasting food or money. I generally buy things that I can make several different meals with- like chicken that I prepare with different sauces, etc. during the week. I'm also a fan of freezing things when possible (often this is ingredients as opposed to an entire meal). That way you don't get bored and you'll have that ingredient on hand when you need it again.
    p.s. that sandwich looks so good!

  3. ooooh that hummus sounds GOOD!! i am weird about leftovers. sometimes i'm so excited to eat them, i want them right at breakfast (but i control myself ...mostly) and other times i'm like EW NASTY. i tell myself that i'm being wasteful if i don't eat it and someone else would be so mad if i didn't! i'm lucky to always have food in front of me because others go days without food :(

    you're eats are so balanced! plus ur snackage is just the way i like it, lots of fresh fruit involved and yummy green grapes :)

    i like leftovers in general. a lot of times it tastes better the next day.. but if its a salad i usually toss it out cuz it gets too soggy. plus sometimes the leftovers can be re-mixed into other meals.. like leftover chicken to be mixed into a fresh salad!

    My rule for leftovers in general is use them until they are gone or until I am sick of them. Once I am sick of them I usually call my cousin (who is one of those family members always down & out) and I give it to him. I try not to waste any food if possible. Sometimes my kids will even bring leftovers to school for lunch if they really liked the meal.

  7. Good for you! I'm terrible when it comes to leftovers. Really really terrible. I blame my husband. He grew up in a household where leftovers were eaten way past their prime and now he won't touch them for fear of food poisoning.


    Instead, I try to half recipes. Or, if there is still a lot leftover, I'll make my own "frozen dinners" by packing a meal into tupperware and freezing it. They get eaten later when I'm in a pinch.
